Chayote (Sechium edule)

This is a vigorous, climbing vine with leaves that resemble cucumber. The light-green pear-shaped fruit can weight as much as 2-3 pound (average is 8 ounces). Each fruit contains a single flat edible seed. Fruits are slightly flattened, sometimes grooved and prickly, but usually smooth.
